01 - Fill a large pot with water and bring to a boil. Divide boiling water among separate heatproof bowls, one for each color desired.
02 - Add a small amount of gel food coloring to each bowl, stirring thoroughly to achieve vivid shades.
03 - Separate noodles into equal portions and cook each batch in the colored boiling water for 2–3 minutes less than the package instructions. Rinse promptly under cold water to halt cooking; set aside.
04 - Melt butter in a saucepan over medium heat. Add cream cheese and stir until the mixture becomes smooth.
05 - Whisk in milk, parmesan, cornstarch, salt, and white pepper. Continue stirring over medium heat until thick and creamy, about 5 minutes.
06 - Gently fold the colored noodles into the finished sauce, maintaining color separation for a cloud effect, or swirling together for a marbled presentation.
07 - Transfer to serving plates and garnish with sliced scallions, toasted sesame seeds, and edible flowers or microgreens if desired. Serve immediately.
