- Preheat oven to 400°F. Line a 12-cup muffin pan with paper liners or lightly grease each cup.
- Whisk flour, baking powder, baking soda, salt, and granulated sugar in a large mixing bowl.
- Add cubed cold butter to the dry mixture and use a pastry cutter or fork to blend until the texture resembles coarse crumbs.
- Stir in shredded cheddar cheese, diced jalapeños, mini marshmallows, and crushed graham crackers.
- Whisk eggs, whole milk, and vanilla extract together in a separate bowl.
- Pour wet mixture into dry ingredients and stir gently until just combined; batter should remain slightly lumpy to produce tender muffins.
- Divide batter evenly among the prepared muffin cups.
- Top each muffin with mini chocolate chips, additional mini marshmallows, and crushed graham crackers.
- Place tray in oven and bake for 16 to 18 minutes, or until muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool further. Serve warm for optimal texture.
