07 - 1 cup 100% fruit juice, such as apple, berry, or orange
08 - 2 tablespoons unflavored gelatin
09 - 2–3 tablespoons honey or agave syrup
→ Mash-Up Toppings
10 - 1 cup freeze-dried fruit, lightly crushed, such as strawberries or raspberries
11 - 1 cup freeze-dried candy, such as Skittles or marshmallows, crushed or chopped
# Method:
01 - Line an 8x8-inch baking pan with parchment paper to prevent sticking.
02 - Combine rolled oats, nut butter, honey, melted butter, vanilla extract, and a pinch of salt in a large bowl. Mix thoroughly until evenly blended. Press the mixture firmly into the lined pan, ensuring a flat, even layer. Refrigerate while making the gummies.
03 - Pour fruit juice into a small saucepan. Sprinkle gelatin over the surface and let it bloom for 5 minutes. Warm gently over low heat, stirring until gelatin is fully dissolved. Incorporate honey and stir until well combined. Transfer mixture to a parchment-lined small baking dish and chill in the refrigerator for 45 to 60 minutes until set.
04 - Once gummies are firm, remove from the refrigerator and cut into small cubes for topping.
05 - Remove oat base from the fridge. Scatter gummy cubes, crushed freeze-dried fruit, and freeze-dried candy evenly over the surface. Gently press toppings into the base to adhere.
06 - Return pan to the refrigerator for an additional 10 to 15 minutes to set the toppings.
07 - Lift bar slab from the pan using parchment paper. Slice evenly into 12 bars before serving.
