01 -  Lay out the flour tortillas on a clean cutting board. 
 02 -  Using a spreading knife, evenly coat each tortilla with 1 oz (about 2 tablespoons) of softened cream cheese. 
 03 -  Place one slice of cheddar or Swiss cheese in the center of each cream cheese-covered tortilla. 
 04 -  If desired, sprinkle chopped dill and diced red onion over the cheese. Drizzle yellow mustard as preferred. 
 05 -  Place one whole dill pickle along the edge of each tortilla. 
 06 -  Roll up the tortilla tightly around the pickle to fully enclose all fillings. 
 07 -  Cut each rolled tortilla into 1-inch segments for bite-sized pieces, or serve whole according to preference.
