# What You'll Need:

01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or 2 tablespoons ginger bug
04 - 1/4 cup fresh lemon juice

05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices
09 - Ice cubes, for serving

# Method:

01 - In a clean glass jar, dissolve the cane sugar thoroughly in filtered water. Add the water kefir grains or ginger bug along with fresh lemon juice. Stir gently using a non-metallic spoon to avoid reaction.
02 - Cover the jar with a breathable cloth or coffee filter and secure with a rubber band. Allow to ferment at room temperature (68–77°F) for 24 to 48 hours, or until the mixture develops a light fizziness and tangy aroma.
03 - Remove the water kefir grains or ginger bug using a fine mesh strainer. Discard or save cultures for future batches.
04 - Pour the fermented base into a pitcher. Add fresh orange juice, fresh lime juice, and mint leaves. Stir gently to incorporate the flavors while preserving carbonation.
05 - Fill serving glasses with ice cubes. Pour the soda mocktail over the ice. Garnish with a thin slice of orange and additional mint leaves if preferred.
06 - Serve immediately to enjoy optimal fizz and freshness.
