# Method:

01 - Preheat oven to 400°F. Lightly grease a 2-quart baking dish.
02 - Boil pasta in salted water until just al dente. Drain and set aside.
03 - Heat a skillet over medium heat. Cook smoked sausage for 3 to 4 minutes until lightly browned, then remove and set aside.
04 - In the same skillet, sauté onion and red bell pepper for 3 to 4 minutes until softened. Add garlic and cook for 1 additional minute.
05 - Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook, stirring, until slightly thickened, about 3 to 4 minutes.
06 - Reduce heat. Stir in cheddar and Parmesan cheeses until melted, then mix in Dijon mustard, smoked paprika, salt, and pepper. Remove from heat.
07 - In a large bowl, combine cooked pasta, browned sausage, sautéed vegetables, and cheese sauce. Mix thoroughly.
08 - Transfer mixture to prepared baking dish. Sprinkle remaining cheddar cheese evenly over the top.
