Vegan Macadamia Dessert Bites (Printable)

01 - 1 cup raw macadamia nuts
02 - 1 cup pitted Medjool dates (approximately 12 dates)
03 - 1/2 cup unsweetened shredded coconut
04 - 1/4 cup almond flour
05 - 2 tablespoons pure maple syrup
06 - 1 teaspoon vanilla extract
07 - 1/2 teaspoon ground cinnamon
08 - 1/4 teaspoon ground nutmeg
09 - Pinch sea salt

10 - 1/4 cup finely chopped toasted macadamia nuts
11 - 1/4 cup unsweetened shredded coconut

# Method:

01 - Add raw macadamia nuts to a food processor and pulse until coarsely ground.
02 - Add Medjool dates, shredded coconut, almond flour, maple syrup, vanilla extract, cinnamon, nutmeg, and a pinch of sea salt to the food processor. Process until the mixture becomes sticky and homogeneous, occasionally scraping down the sides.
03 - Using a tablespoon measure, portion out the mixture and roll into smooth balls by hand.
04 - Optionally, roll each macadamia dessert bite in finely chopped toasted macadamia nuts or shredded coconut to coat.
05 - Arrange bites on a parchment-lined baking sheet or tray and refrigerate for at least 30 minutes until firm.
06 - Transfer finished bites to an airtight container. Refrigerate for up to one week.
