Ingredients
- All-purpose flour: 2 cups

Instructions
- Prep Oven:
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease well.
- Mix Dry Ingredients:
- In a large bowl, whisk together flour, baking powder, baking soda, ground ginger, and salt.
- Mix Wet Ingredients:
- In a separate bowl, whisk together melted butter, maple syrup, cream soda, eggs, and vanilla extract until smooth.
- Combine:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Add-Ins:
- Fold in the chopped crystallized ginger and white chocolate chips if using.
- Divide and Bake:
- Divide the batter evenly among the muffin cups. Bake for 16–18 minutes or until a toothpick inserted in the center comes out clean.
- Cool & Stick:
- Cool muffins in the pan for 5 minutes then transfer to a wire rack. Once just warm insert a popsicle stick into the base of each muffin. Let cool completely before serving.
